This year I decided to get into the halloween spirit a little more, but in our own way. I am trying to be mindful of not buying decorations that will only be used for a few days before they are discarded into the rubbish, encouraging companies to keep making throw away items and being detrimental to our environment. 

That includes buying any dress ups and also any styling items that we used to shoot this content. We used only things we could use again or eat!

Also I wanted to make these recipes as easy and as healthy as possible. I don't mind Maeve having treats but I want them to not have loads of butter, refined sugars and other nasties. 

This family friendly dinner recipe can use whatever root vegetables you have, and you don't need any cookie cutters! I did all the shapes with a paring knife, and had to stop myself from spending way too much time on each of the designs.

One thing to note is that depending on the thickness and size of each veg is that they will have different cooking times. I left the little pumpkins and moons in for too long and they came out browner than I would have liked! Although I do have to say I like my roast veggies crunchy not soft and soagy!

Sensory Experience - Cooking with Kids

Recipes for kids we think are perfect if  they can get involved and touch, feel and smell the ingredients.  

IMaeve loves washing and water in general, so I let her wash all vegetables in a little bowl. She also helped arrange all the veg onto the baking trays.

- Let them feel each ingredient separately and explain what each one is
- Let them wash the veg and taste each one if they want! Maeve loved smelling them as well.
- Let them help with adding the mix herbs or honey on.

General Rules:
- Always have something on hand for them to play with. It will save lots of mess and frustration. E.g. measuring spoons, measuring jugs.
- I measure my ingredients before hand. I find Maeve enjoys the mixing parts most and gets bored (and therefore destructive) if she isn't getting involved.
- Please always take care when your kids are in the kitchen. We are only providing advice from a mum's point of view and you should never leave children around sharp objects or unattended.

INGREDIENTS
You can use almost all root vegetables, as well as any other vegetable that can be roasted. I've listed an extensive list below but just pick whatever you've got in your cupboard or whatever your little one's favourite veggies are!!
Ideas for vegetables to roast:
- Potato
- Sweet potato
- Pumpkin
- Beetroot
- Courgette
- Carrot
- Parsnip

Other ingredients:
- Olive oil spray
(this is just what I prefer to use as it minimises the amount of oil you need, but you can use a drizzle of ordinary olive oil)
- 4 garlic cloves (left whole but crushed slightly)
- mixed herbs 
- drizzle of honey (optional if you want to add to your carrots)
- salt & pepper (optional if you want to add, I don't season Maeve's)

METHOD
1. Peel your root vegetables
2. Parboil your larger root vegetables (potato, sweet potato, pumpkin, beetroot, parsnip). Do this by cutting in half along the width (refer to picture above for a guide) and then placing into boiling water for maximum 5 minutes. This will decrease the roasting time as well as help you cut the shapes easier. 
3. Cut vegetables into 1cm thick slices and put them aside ready to shape
4. Preheat your oven to 200°C (392°F)
5. Time to get creative and use your paring knife to shape your vegetables. Some ideas include ghosts, witches hats, pumpkins, cats, half moons, bats, coffins and stars.
6. Place sheets of baking paper onto your baking tray (I like to spray my tray a couple of times with oil, a trick my grandmother taught me so it stays in place). Organise them into trays according to the size of your vegetable shapes - the small ones like carrots and moons will cook quicker. You can see in the pictures that I over cooked my small veg so don't be like me and be better prepared!
7. Spray/ drizzle with some oil, add some mixed herbs and scatter garlic onto trays. If you're seasoning, this is the time to do it. 
8. Cook for between 30 - 45 mins, turning over halfway through and checking on regularly to make sure you are taking out any that cook quicker!
*If you are cooking carrots you can drizzle some honey over them when you turn them over.
